Good morning everyone! Happy June to ALL!  Al and I are back from our Alaskan Cruise all refreshed and ready to go!  We did a lot of walking all over the ship and the ports.  Instead of the elevators we took the stairs 99.9% of the time.  We were lucky enough to have beautiful, clear, sun-shiny days while in Sitka and at the Hubbard Glacier.  Just gorgeous!
 It's that time of the month again where we get together and have a nice visit.  Let's find our comfy chair and get settled in. Don't forget your tall glass of refreshing water and your beautiful SMILE.
   
 
 
 
   A LETTER FROM THE HEART

 This time I thought I would simply share a letter I wrote for a friend. I hope you don't mind.
 
 
 Dear Friend,
 
 I heard that you were struggling with your weight loss journey, and that you might be thinking about giving it up. I do understand why you might want to do that, but if you wouldn't mind I would like to add a few thoughts because I care about you.
 
 Controlling your weight is a difficult thing. When you struggle in life, your body sends your mind false messages, telling it that you need food when you really need love, peace, a quiet walk by a stream, or a happy conversation with a friend.
 
 Eating starts off wonderfully, that explosion of flavor when your stomach has been clamoring for food, especially something with lots of calories. But in the end there is the scale, that over-full feeling, and more letting out of the belt or moving to a larger size of clothes.
 
 Giving up is easy, especially when things are hard to manage. But giving up is also hard. You have to face the results day after day and then you have nowhere to turn except to return to the struggle.
 
 As your friend I don't want to preach to you; I am a fellow struggler and not qualified for the food pulpit. No, I just want you to know that it  matters what you do, that you matter to me. I know that it isn't easy, and I know you want to be successful. I also want you to know that I want you to be happy!
 
 Struggle is never easy, whether it is the struggle of a young bird trying to break out of his shell so he can meet his mother for  the first time, or a commuter fighting to make it to work on time. Life is a struggle and it always will be. but you are worth the struggle! Is there anything more wonderful than watching that bird break out of his shell? He is fighting for life and it makes us feel happy to see that spirit within that little creature's heart.
 
 How much more wonderful is it to see a dear friend refuse to give up and to struggle for health and a worthwhile goal?
 
 It would be wonderful if I could make this an easy path for you to walk. I would do that in a minute if I could. But in this universe, in this reality, that  is not possible. But I can tell you that you are not alone, and that it matters that you are fighting for your health and your happiness. Far more than any bird, your efforts have cheered my heart—not because they were hard or painful efforts...just the opposite—but because they represent your desire to be happy and your willingness to fight for life. The little bird is going to be successful, and the shell will not keep him locked up. Neither will you be stopped by the challenges before you!
 
 My friend, your successes touch many others, and they touch me. Your struggle is my struggle and when you do well, it cheers my soul. When you fall, my heart watches in agony for you, hoping and wishing that you will soon get up and return to the sky on your beautiful wings.
 
 I don't have all the answers to make your journey simple, but I do have a hand to reach out to you in friendship, whether to celebrate a success, or to help lift your spirit when you are down.
 
 Life is good if you believe it is good—don't we always believe it is good for that little struggling bird?
 
 I believe that life is very special for you, and I am pulling for you, rooting for you, to struggle and to succeed—I believe in you my friend, and I know you will be successful, if not this very day, then soon, on another near and bright day.

 Food Finds
 
 Joan, a very good friend of mine and a fellow Weight Watcher, was here visiting for a couple of days this past weekend.  We had a marvelous time and of course, we shared our great low-point food finds.  Here are some that she introduced me to.  I had the Garlic Shrimp last night over some brown rice!  YUMMY!  It was very filling and tasted wonderful!  I have yet to try the other ones listed below but they are in my freezer waiting for me.
     
     Tai Pei Sweet 'n' Sour Chicken with steamed rice, 1 cup[230 calories/3g fat/0g fiber/45 carbs/250mg sodium/6g protein]*5
Tai Pei Cashew Chicken with steamed rice, 1 cup[160 calories/3g fat/1g fiber/24 carbs/780mg sodium/8g protein]*3.5

 Yogurt Parfait
 
 This makes a great breakfast, snack or a pick-me-up in the afternoon around 3 pm!
 
 Makes 4 servings
 
3/4 cup plain or artificially sweetened nonfat yogurt
1/4 cup berries
1/4 cup mango
1/4 cup low-fat granola
1 tbsp shredded coconut
 
 In a tall parfait glass, layer the following:
 
 One-third of the yogurt
 
 Half the fruit, all of the granola, another one-third of the yogurt, rest of the fruit, rest of the yogurt, top with the coconut
 
 Per serving: 250 Calories, 4g Fat, 4g Dietary Fiber, 44g Carbohydrate, 210mg Sodium, 13g Protein *4.5
 
 Try using Nonfat Light Yogurt (usually about 100 calories per 8 oz) and  Kashi Go Lean (crunch up) instead of granola.  This will save you some calories!

 Almonds
 
 Almonds have been known to do your heart good. In a test with volunteers at the University of California, Davis, researchers substituted almond and almond oil (slightly more than 2 1/2 ounces of almonds, about 48 nuts and nearly 1 1/2 ounces of almond oil daily) for half the fat in the diets of the volunteers. At the end of 6 weeks all 22 of the men and women had lower total cholesterol, lower LDL levels—a 6% drop—and significantly lower triglycerides—a 14% drop.  The HDL level went up.
 
 Ideas for getting some almonds into your diet:
 
   ~Prevention Healthy WomanSprinkle a tablespoon or two of slivered almonds over whole wheat couscous or steamed jasmine rice with peas.
 
Sprinkle some slivered almonds on your oatmeal or cold cereal.
 
Use them in beef or poultry dishes.
 
They are a great topping for a curried stew or carrot soup.
 
For a great summer dessert sprinkle some crushed almonds over grilled Figs, nectarines, or peaches drizzled with balsamic vinegar.
 
Another way to get some almonds in is to use almond butter to make your peanut butter and jelly sandwich.
 
Drink some Almond Breeze Almond Milk.  It is a delicious 8 oz, 1 point snack!

 What Can You Do With a Baked Potato?
 
 An 8 oz cooked (10 oz uncooked) baked potato is 3 points.  That is a lot of potato and as you can see very low in Points.  So how does the 3 point potato become the 6-10 point potato?  All you have to do is load it up with butter and sour cream (not the light version).  Throw on some bacon and cheese and you've moved it up a couple more Points.  It's so easy to add on the Points, isn't it?
 
 Let's see what we can add to this baked potato to 'spice it up' a bit.  Here are just a few ideas for some delicious low fat, low calorie toppings which are loaded with flavor.
 
~The Portion Plan by Linda GassenheimerLight or Fat-Free Sour Cream—Using just a tablespoon you'll get that great sour cream taste without all the calories.
If you'd rather not have sour cream you can try adding a tablespoon of plain nonfat yogurt and top it with chives.
Another great potato topping is a mixture of nonfat yogurt (2 tbsp), grainy mustard (2 tsp) and some chopped scallions (2 tbsp).
Are you a mushroom lover?  How about microwaving 1/2 cup sliced mushrooms with 1 tsp oil and add chopped parsley.
Last but not least, try some of those wonderfully delicious salsas out there.  I buy a Peach Salsa which would be wonderful on a baked potato.  Now's your change to get creative with all the many varieties of salsa on the shelves.

possible, I calculate ALL my Points on my Offline Points Calculator in
the Half Points Mode, which rounds UP to the nearest Half Point. This
keeps my site consistent. All point values shown in BLACK are
calculated with the 10-gram fiber cap [Original 123 Success Points].
When there is a difference with the 4 gram fiber cap calculation, I
show the points value for that in RED.
