This is an easy Beef Stew recipe that is cooked in the crockpot. I may double the recipe next time as Al and I finished this in a couple of days.

Ingredients
- ⅓ cup Flour, self-rising
- ½ tsp Salt
- ½ tsp Pepper, black
- 1 lb Stew Meat, beef
- 1 tbsp Olive Oil, extra virgin
- 1 cup Onion, white, chopped
- 2 cups Mushrooms
- ½ tsp Garlic, Minced (adjust to your taste)
- 1 tbs Rosemary, dried
- 1 tsp Thyme, dried
- 1⅓ pound Potatoes, golden
- 2 cups TJ's Organic Vegetable Foursome (or any mixed veggies)
- 5 (4-5") stalks Celery
- 6 cups Water
- 1 packet Onion Soup, mix
- 2½ tsp Worcestershire
- ½ tsp Red Chili Pepper Flakes
Directions
- Mix the flour with the salt and pepper together.
- Cut the stew meat into 1" cubes; place in flour mixture and shake to coat.
- In a non-stick skillet, add oil. Add the meat and flour mixture, along with any extra flour.
- Brown the beef. Add the onion, garlic and mushrooms. Cook until onion is soft.
- Move the beef mixture to the bottom of your slow cooker. Add the rosemary and thyme; let cook on low until meat is tender.
- Add the potatoes, vegetables, celery, water, soup mix, and Worcestershire sauce.
- Cook on high for 2-1/2 hours, and then turn down to low. Cook on low for 6-8 hours, or until potatoes are tender.
