Dot’s Mix-up in the Crockpot

I threw stuff in the crockpot and came up with this.  It was delicious!  Smart Points have been added to the nutritional values.

I threw stuff in the crockpot and came up with this. Al and I loved it.

  • 1 lb. 1 oz Ground Beef, 93% Fat Free (this is what I had)
  • 2 cups Red, Yellow, Green Bell Peppers
  • ⅔ cup Roasted Corn (Trader Joe's frozen)
  • 1 cup Pinto Beans, dry
  • 1 cup yellow onion, chopped
  • 1 can Diced Tomatoes (1¾ cup)
  • 1 can Tomato Sauce (1¾ cup)
  • ¾ cup Black Japonica Rice (Trader Joe's)
  • I cup Mushrooms, sliced (I used canned)
  • Sprinkles of Crushed Red Pepper
  • 2 tbsp Chili Powder
  • 1 tsp basil
  • ⅓ cup Tortilla Soup Mix (bulk foods at Winco)
  1. Cook up the ground beef.
  2. Add all the ingredients to the crockpot.
  3. Cook on low for 8 to 10 hours. (I did it overnight for 12 hours on low)
  4. Enjoy!
I rinse my canned mushrooms with cold water, which seems to reduce the sodium content.

    That recipe is great, and it tasted YUMMY!!! Thank you Babe!!! Like the sign says in our kitchen, you do kiss better than you cook, but you cook incredibly well! 🙂

    You look really great in your new exercise outfit, and so far the past week you have gone over 10 miles on your elliptical trainer. 🙂 You go girl!!!

    I know the scale has not been moving the way you would like, but I want you to know something: you ARE DOING IT, each and every single day!!! You are eating right and you are exercising regularly. You are looking better with each passing day. You are moving around much easier, and you just look more alive all the time. My old Dotti is coming back, as you limber up and become more fit.

    And think about 43 pounds, what that means. If that were water in jugs, you would have dropped off your back, 5 gallons, a quart and pint of water!!! Holy cow, Dotti what a great loss!!! Think about what putting that much water into a huge backpack and hauling it around with you all day, every day was like. No wonder you are looking so good and moving so much better!!! I am so proud of you Babe!!! Wow!!!!

    On the days the scale doesn’t do what you want, never, ever forget about what you have already done, because it is incredible!!! And remember you are doing the right things today. You did the right things yesterday and the day before. You have been doing the right things since September and you could not do better than that; you are being the best you can be, and let me tell you, the best you can be is AMAZING!!! I stand in awe of how great you are doing, and you are my hero, and my inspiration!!! Never look back, you are on the path and walking it proudly and with style!!!
