Vanilla Pudding

Thank you Judy! This is what Judy had to say about this recipe: "This pudding
satisfies that mid-morning or mid-afternoon snack attack. The change I have
made to the boxed directions is to use low-fat buttermilk in place of the skim.
It gives it a pleasantly tart taste and is thicker and creamier than the plain milk version.
If I have a lemon handy, I will also squeeze in some lemon juice to taste."

Makes 4 servings

Ingredients

1 box fat-free, sugar-free vanilla instant pudding
2 cups low-fat buttermilk
1 squeeze of lemon juice

Mix according to boxed directions...the buttermilk version is thicker and creamier
than using plain milk and will be a pudding consistently quickly. I portion it into four
5 oz. plastic dispenser cups, which gives you about 1/2 cup of pudding per cup.
