Fresh Tomato Vinaigrette

Toss this summery dressing with romaine or spinach.
Nutrition Bonus: Leave out the oil for a fat-free homemade dressing.

Makes about 1/2 cup

Ingredients
2 vine-ripened tomatoes, halved and seeded
1 small clove garlic, peeled
1 tbsp red-wine vinegar
1 tbsp olive oil, preferably extra-virgin
1 tbsp finely chopped fresh parsley or basil
Salt & freshly ground black pepper to taste

Grate tomato halves over a small bowl. Skewer the garlic clove onto the
tines of a fork, and use to vigorously mix vinegar into the tomato juice. Still
mixing, slowly drizzle in oil. Add parsley or basil and season with salt and pepper.

SERVING SIZE:  1 tablespoon
