& Sour Red Cabbage
Makes 10 servings
1 1/2 tbsp unsalted butter
1 1/2 cups chopped onion
1 (2 lb) head red cabbage, cored, shredded (1/4" thick; 8 cups)
1 Granny Smith apple, peeled, quartered, cored, thinly sliced
1 cup water
3 tbsp red-wine vinegar
2 tbsp sugar
1 1/2 tsp salt
1/2 tsp each caraway seeds and pepper
In Dutch oven, melt butter. Add
onion; sauté 5 minutes. Add cabbage and
apple; saute 5 minutes, until cabbage starts to wilt. In bowl, combine the water,
1 1/2 tbsp vinegar and remaining ingredients. Add to cabbage mixture; cover.
Simmer, stirring, 1 1/2 hours, until cabbage is very tender. Remove from heat.
Add remaining vinegar.
