Stuffed Peppers

 This is my own creation and I thought I'd share it with you and your readers. Great way to use up leftover meat and rice! Can also freeze stuffed peppers before baking. Thank you Nicki!

Makes 4 servings

Mix together 1 cup ground beef (cooked) and 1 cup brown rice (cooked),
with one packet of taco seasoning (or your own combination of chili powder,
cumin, onion powder, and oregano). Cut two green peppers in half. Remove seeds
and membranes. Put 1/2 cup meat/rice mixture in each half. Place stuffed
peppers in a baking dish and pour 1 small can tomato sauce over the tops of the
peppers. Cover and bake at 350 for 30 minutes. Just before serving,
sprinkle 1 tablespoon shredded cheddar cheese over the top of each stuffed pepper.

SERVING SIZE:  1 stuffed pepper
