Strawberry Pie #2
This Strawberry Pie was sent to me by "Lauretta"
and has only 2 POINTS
per serving (1/6 of pie)! Wow! Sounds too good to be true. Thank you Lauretta.
Makes 6 Servings
Ingredients
Crust
3/4 cup flour
3 tbsp soft, whipped diet margarine (tub style, not stick)
2 tbsp powdered sugar
Filling
3 cups fresh strawberries
1 small pkg strawberry sugar free jello
1 cup water
1 tbsp cornstarch
3 pkgs Equal sweetener (or Splenda)
Spray 9" pie pan with Pam (or other brand)
cooking spray. Mix crust ingredients with a
fork and press into prepared pie plate. Bake crust at 350 degrees until golden
brown
(10-14 minutes). Cool crust 10-15 minutes before adding filling. To Prepare
Filling: Slice
strawberries into medium size mixing bowl. Sprinkle the Equal over sliced
strawberries
and stir, being careful not to break up the berries. Let stand while preparing
the rest
of the filling. Mix jello, water and cornstarch in saucepan. Cook over medium
heat until
thick and clear. Let sit 3-5 minutes and then add strawberries. Stir carefully
and turn into
pre-baked pie crust. Cool at least 1 1/2 hours before serving. Cut into six
pieces.
