Spinach Topped Noodles

Makes 7 servings

Ingredients
8 ozs wide wheat noodles or fettuccine
16 ozs fresh spinach, washed thoroughly
3 ozs cooked pork strips (see Preparing Meats)
1 tbsp low-sodium soy sauce
1 1/2 tsp rice vinegar (see Rice Vinegar)
2 tsp Eden Foods sesame shake, or
chopped sesame seeds (see Sesame Shakes)
1/2 tsp sesame oil

Cook the noodles according to package directions or until just tender. Drain in
a colander and rinse with cold water. Set aside. Lightly coat a nonstick wok or
frying pan with nonstick cooking spray and place over medium heat. Add the
spinach, and sauté until soft and wilted (3-4 minutes). Add the pork, soy
sauce, vinegar, and sesame shake. Mix together well ad continue to cook
another 2-3 minutes. Add the noodles and toss with the spinach mixture.
Sprinkle with sesame oil and serve immediately.
