Seafood Chow Mein

Try substituting fresh squid or scallops for the shrimp in this dish.

Makes 7 servings

Ingredients
8 ozs wheat noodles or thin spaghetti
8 ozs medium shrimp, deveined
1 cup bean sprouts
1/2 cup chopped white onion
3 cloves garlic, minced
1 tbsp minced fresh ginger
1 tsp Eden Foods sesame shake or chopped sesame seeds
(see Sesame Shakes)

Sauce
2 tbsp hot mustard sauce
1 tbsp rice vinegar (see Rice Vinegar - Chinese Glossary)
1 tbsp cooking wine
1 tbsp low-sodium soy sauce

Cook the noodles according to package directions or until just tender.
Drain in a colander and rinse with cold water. Set aside. Mix all of the
sauce ingredients together in a small bowl and set aside. Lightly coat a
nonstick wok or frying pan with nonstick cooking spray and place over
medium heat. Add the garlic and ginger, and sauté until the garlic begins
to brown. Add the shrimp, bean sprouts, onions and sesame shake. Cook
until the onions become clear (about 5 minutes). Add the noodles and sauce
to the shrimp and vegetables. Mix thoroughly. Serve hot.
