Herbed Peas & Onions

Thyme, dill and sautéed onions give sweet peas a savory flavor
that pairs well with almost any main dish.

Makes 8 servings

Ingredients
1 tbsp extra-virgin olive oil
2 onions, thinly sliced and separated into rings
1 cup reduced-sodium vegetable broth
2 tsp dried thyme
1 tsp salt-free lemon-herb seasoning
2 packages (10 oz each) frozen peas, thawed
2 tbsp chopped fresh dill

In a large no-stick skillet over medium heat, warm the oil. Add the onions and
cook, stirring frequently, for 6 to 8 minutes, or until the onions are lightly
browned. Stir in the broth, thyme and lemon-herb seasoning. Bring to a boil
over high heat. Reduce heat to low and stir in the peas. Cover and cook for
6 to 8 minutes more, or until the peas are heated through and tender. Uncover
and cook 1 minute longer, or until most of the liquid evaporates.
Sprinkle with the dill before serving.
