Chicken & Spaghetti
I created this recipe and it
it delicious, low in Points and very satisfying.
This recipe serves 1 but can be easily doubled or more to serve guests
(or husbands). The melted feta gives the dish a real creaminess and makes
it taste yummy. You'll see that the Points are quite low, 8 in total,
yet it is very filling. Thank You Angela!
Makes 1 serving
Ingredients:
1 boneless, skinless chicken breast
(I poach it in a bit of water) -
reserve the cooking liquid [3 pts]
1 cup cooked spaghetti (I like whole wheat) [3 pts]
2 roma tomatoes, diced [0 pts]
1 garlic clove, chopped [0 pts]
30 gms (1 oz) light feta cheese [2 pts]
Cube chicken; add pasta to chicken
and liquid. Add tomatoes & garlic.
Heat over medium heat. Add feta and toss until slightly melted.
Add salt and pepper to taste.
