Oat Bran Muffins

Makes 12 muffins

2 cups oat bran
1/4 cup packed brown sugar
1 cup skim milk
2 tsp baking powder
1/4 cup honey
2 egg whites or 2 oz egg substitute
2 tbsp vegetable oil (I use 1 tbsp Lighter Bake - see below)

In a large bowl stir together the dry ingredients; set aside.  In a small
bowl mix liquid ingredients together until well blended. Add liquid
moisture to dry ingredients stirring just until moistened.  Line muffin
tins with paper baking cups.  Spray bottoms only with cooking spray.
Fill pans almost full.  Bake at 400 for 15-18 minutes.  

SERVING SIZE:  1 muffin

PER SERVING:  90 Calories, 2 Fat, 2 g Fiber

NOTE:  The "Lighter Bake" is made by Sunsweet and found in the
supermarket section with oils and shortening.  It is in a jar with a
green cover.  The replacement is half the amount of oil that
the recipe calls for.  There is no fat in it.  It is made from pureed fruit.
