Noodles in Sesame-Soy Sauce

Use dark, or Asian, rather than light sesame oil to
make this Chinese restaurant favorite.
Its intense flavor allows you to use just a little.

Makes 6 servings

Ingredients
2 tbsp reduced-sodium soy sauce
1 tbsp Asian sesame oil
1 tsp sugar
1 tsp white-wine vinegar
4 cucumbers, peeled and julienned
3 cups hot cooked vermicelli or rice noodles
6 scallions (green part only), chopped

To prepare the sauce, in a small bowl, combine the soy sauce, oil, sugar and
vinegar. In a large bowl, combine the cucumbers, vermicelli and the sauce;
toss to coat. Transfer to a platter; sprinkle with the scallions.
