Mushroom Stew
An especially hearty dish, in which the mushrooms add a meaty flavor.
2 teaspoons olive oil
4 garlic cloves, minced
2 cups sliced shiitake or white button mushrooms
2/3 cup chicken or vegetable broth
2 cups sliced mushrooms
1/4 cup canned crushed tomatoes
1/4 teaspoon dried marjoram leaves
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
2 tablespoons chopped fresh basil
In large nonstick skillet heat oil; add garlic. Cook over medium heat, stirring
frequently, 1 minute. Add shiitake mushrooms and broth; cook, covered, 3 minutes.
Stir in mushrooms; cook, covered, 4 minutes, until mushrooms are almost tender.
Stir in tomatoes, marjoram, salt and pepper; cook 4 minutes. Stir in basil and serve.
