Minestrone

Makes 8-10 servings

Ingredients:

1/4 cup lo-cal margarine
4 envelopes low salt beef bouillon
2 potatoes, peeled & diced
3 carrots, peeled & sliced
2 ribs celery, sliced
1 zucchini, diced
1 onion, diced
3 cloves garlic, crushed
2 tsp dried oregano
28 oz can whole tomatoes
1/3 cup tubettini or ditalini
10 oz fresh spinach, rinsed
15 oz can red kidney beans
Grated parmesan cheese (optional)

In saucepot melt margarine. Add bouillon, potatoes, carrots, celery,
zucchini, onion, garlic & oregano; cook 15 minutes, stirring often. Add
tomatoes, 4 cups of water and tubettini; bring to a boil. Reduce heat & simmer
15 minutes. Add spinach and beans; cook until heated through
(about 10 minutes). Serve with grated cheese.
