Marilyn's Sweet 'n' Sour Cabbage

 Thank you so very much Marilyn!  Talk about a LOW POINT goodie!  
We can definitely eat all we want of this with NO GUILT!  

Ingredients:

One head of purple cabbage
1/3 cup vinegar (white or cider works best)
1/4 cup brown sugar
One peeled, sliced apple (any variety)
1 tsp caraway seeds (optional)

Remove first outside leaves of cabbage and discard. Chop remaining cabbage
into bite-sized pieces or strips. Place in Dutch oven (or real large pot) with a
good lid (don't add any water, REALLY!). Add remaining ingredients, stir,
bring to an easy boil; then cover and simmer on low until done (about 45 minutes),
stirring as needed.

POINTS:  5 Points for the WHOLE THING!!!!!!!!   WOW!!!!!!

NOTES:  This dish holds up well in the refrigerator for up to a week or more.
Individual portions can be easily zapped in the microwave. Delicious as a
side vegetable with any type of protein.
