Lyonnaise Potatoes

Makes 4 Servings

Ingredients
1 tablespoon + 1 teaspoon olive oil
1 pound 4 ounces all-purpose potatoes, boiled,
peeled and sliced 1/4" thick
1/2 teaspoon salt
1/4 teaspoon dried marjoram leaves
1/8 teaspoon black pepper
1 cup thinly sliced onions
2 garlic cloves, slivered
1/4 cup chicken broth

In large nonstick skillet, heat 1 tablespoon of the oil over moderately high heat;
add potatoes. Sprinkle with salt, marjoram and pepper and cook, turning as they
color, about 10 minutes. Meanwhile, in separate large nonstick skillet, heat
remaining teaspoon oil over medium heat; add onions. Cook 3-4 minutes. Lower
heat, add garlic and cook 2 minutes. Add broth; cook 5-7 minutes longer, until
soft. Transfer onions to pan with potatoes and toss together.
