Honey-Apple Pancakes

Serve these golden griddle cakes with honey,
reduced-calorie syrup, or fresh fruit.

Makes about 8 (4") pancakes

Ingredients
Nonstick Cooking Spray
1 1/2 cup all-purpose flour
2 tsp baking powder
1 beaten egg
1/4 tsp salt
1/4 tsp apple pie spice
1/8 tsp baking soda
3/4 cup apple juice
2 tbsp honey
1 tbsp cooking oil

In a medium bowl stir together flour, baking powder, salt, apple pie spice, and
baking soda.  In a small bowl stir together egg, apple juice, honey, and oil; add
all at once to the flour mixture, stirring till mixed but still slightly lumpy.  Spray
a cold nonstick griddle or heavy skillet with nonstick spray coating.  Preheat
griddle or skillet over medium heat.  For each pancake, pour about 1/4 cup of
the batter onto the hot griddle or heavy skillet.  Cook for 2 to 3 minutes or till
pancakes have a bubbly surface and slightly dry edges.  Turn pancakes; cook for
2 to 3 minutes more or till golden brown.

SERVING SIZE:  1 (4") Pancake
