Ham Roll-Ups with Zucchini Relish
This relish is also delectable
on a turkey sandwich, or as an accompaniment
to grilled chicken. It will keep in the refrigerator for a few days,
so make extra, if you like.
Makes 2 servings
Ingredients
1/4 medium zucchini, finely diced
1/4 medium yellow squash, finely diced
1/4 red bell pepper, seeded and finely diced
1 tbsp minced sweet onion
1 tbsp rice-wine vinegar
1/4 tsp dried oregano, crumbled
1 tsp olive oil
1/2 tsp salt
Freshly ground pepper, to taste
2 small whole-wheat tortillas
4 slices lean deli ham
2 tsp country Dijon mustard
In a small bowl, mix the zucchini, squash, bell pepper, onion, vinegar, oregano,
oil,
salt and pepper; toss to combine. Top each tortilla with 2 ham slices;
spread the
ham with the mustard. Top with the squash relish; fold into an envelope.
