Greens & Gorgonzola Salad
A tiny amount of full-flavored cheese, such as
Gorgonzola, will flavor a large amount of healthful greens.
1 ounce Gorgonzola cheese
2 tbsp strong brewed tea, such as Earl Grey or orange pekoe
1 tbsp white-wine vinegar
1 tbsp olive oil, preferably extra-virgin
1 tbsp finely chopped shallots
1 tsp Dijon mustard
Salt & freshly ground black pepper to taste
3 cups washed, dried and torn red leaf lettuce
3 cups washed and dried watercress sprigs
In a salad bowl, mash the cheese with a whisk. Add tea, vinegar, oil, shallots,
mustard, salt and pepper and whisk to combine. Add lettuce and watercress
and toss well. Garnish with a grinding of black pepper.
