Friendly Fiber Muffins

Makes 12 Muffins

Ingredients
1 cup whole wheat flour
2 t baking powder
½ t salt
1-¾ cups Kashi Good Friends cereal
¾-cup skim milk, rice or soy milk
¼ cup honey
2 egg whites
¼ cup unsweetened applesauce
1 medium ripe banana, mashed
Non-stick cooking spray

Preheat oven to 400F. In a small bowl, stir together flour, baking powder and salt.
Set aside. In a large mixing bowl, combine Kashi Good Friends cereal and milk
and let stand for 2-3 minutes. Add the egg whites and beat well. Stir in
applesauce and banana. Add flour mixture and mix only until dry ingredients
are moistened (over-mixing will produce rubbery muffins). Fill sprayed
muffin tins. Bake for 20-25 minutes or until lightly browned.

Tip: I have made the Kashi muffins many times and have a few suggestions
to make them less dry. I increase the skim milk and the unsweetened
applesauce by 1/4 each, and use egg substitute for the egg whites.
The texture was much better, not so rubbery, and the muffins themselves
were much more tasty. The muffins are now a pleasure to eat. The other two
things I did were to add 1 tsp of cinnamon to the dry mixture, and to use the
double-sized muffin pans (they have six tins on them instead of 12). The cooking
time was increased slightly and now the muffins are 2 Points each.  Laura
