French Toast
In France, French toast is called
"Pain Perdu", or lost bread, because it is
a way of salvaging bread that has begun to go stale. In this recipe,
the bread gets "lost" altogether - we use flour tortillas.
Makes 4 servings
Ingredients
1/2 cup egg substitute
1 tbsp sugar
1/2 tsp cinnamon
4 small flour tortillas
1 tbsp margarine
1 peach, sliced
Place the egg substitute in a shallow bowl. In another shallow bowl, combine
the sugar and cinnamon. One at a time, coat the tortillas in the egg substitute,
then dip them in the cinnamon sugar. In a medium nonstick skillet, melt
the
margarine. One at a time, cook the tortillas until the egg is lightly golden,
about 2 minutes on each side. Transfer to a plate. Spoon the peach
slices
into the center of the tortillas; roll into cylinders.
