Easy Chocolate Pudding Cake

Makes 9 servings

Ingredients
1 (10.1 oz) pkg reduced-fat devil's food cake
1/2 cup plus 2 tbsp fat-free milk
2 tbsp non-fat sour cream
1 tsp vanilla extract
1 (4 oz. jar) sweet potato baby food
Vegetable cooking spray
1/4 cup firmly packed brown sugar
2 tbsp unsweetened cocoa
1 1/4 cups boiling water
1/2 cup plus 1 tbsp frozen reduced-calorie whipped topping.

Combine first five ingredients, stirring well. Spoon batter into an
8-inch glass baking dish coated with cooking spray. Combine brown sugar
and cocoa; sprinkle over batter. Pour boiling water over batter (do not stir).
Bake at 350 degrees for 30 minutes.Remove from oven and let stand
5 minutes. Spoon cake into individual serving bowls.
Top each serving with 1 tbsp whipped topping.
