Creamy Herb Dressing

This dressing is perfect  for Boston or butter lettuce.

Makes about 1 cup

3/4 cup buttermilk
1/4 cup reduced-fat mayonnaise
1/4 cup chopped scallions
3 tbsp chopped fresh dill
1 tbsp chopped fresh parsley
1 tbsp fresh lemon juice
1 tbsp prepared horseradish
Salt & freshly ground black pepper to taste

In a blender, combine buttermilk, mayonnaise, scallions, dill, parsley,
lemon juice, horseradish, salt and pepper. Blend well until smooth.
(The dressing can be stored, covered,
in the refrigerator for up to 4 days.)

SERVING SIZE:  1 tablespoon
