Cheesy Vegetable Soup

"Our leader gave us the recipe for this soup a few weeks ago, and I love it!
It's what we call a "dumper", meaning you open a can or bag and dump it in
the pot! Those are great when you're tired and don't feel like making
much effort to fix supper."  Thank you Donna!

Makes 10 servings

Ingredients
2 lb of frozen veggies - your choice--California Medley is good
3 cans Fat-Free Chicken Broth
1 can of Rotel tomatoes--it's up to you how spicy you want it!
10 oz. Light Velveeta

Dump all ingredients in the pot and bring to a boil.
Let simmer for 4-5 minutes.
Add 10 oz of Light Velveeta in small pieces (to melt faster).
When it's melted in, you're ready to eat.
I don't even need crackers with this.

SERVING SIZE:  1 cup

Note: Some people like one serving over a baked potato.
I prefer mine in the bowl. It's satisfying and really tasty.  Enjoy!!
