Apricot Dressing

This is good with a salad of bitter greens or on a couscous salad.
Nutrition Bonus: Apricot nectar boosts the carotenoid content of
a green salad even higher.

Makes about 3/4 cup

1/3 cup apricot nectar
3 tbsp minced dried apricots
3 tbsp balsamic vinegar
3 tbsp coarsely chopped fresh parsley
2 tbsp olive oil, preferably extra-virgin
2 tsp minced garlic
2 tsp grainy mustard
1 tsp sugar
Salt & coarsely ground black pepper to taste

In a small bowl, whisk apricot nectar, apricots, vinegar, parsley, oil,
garlic, mustard, sugar, salt and pepper. (Alternatively, combine
ingredients in a small jar, secure the lid and shake.)

SERVING SIZE:  1 tablespoon
