Apple-Cornmeal Muffins

Makes 12 Servings

Ingredients
1 1/4 cups skim milk
3/4 cup cornmeal
1 cup all-purpose flour
2 tsp baking powder
3/4 tsp salt
1/2 tsp baking soda
1/4 cup honey
2  Tbsp vegetable oil
1 egg white
1 large apple; peeled, cored, and diced

Preheat oven to 400 degrees.  Spray 12-cup muffin tin with nonstick cooking
spray.  In large bowl, combine milk and cornmeal; let stand 10 minutes.  In medium
bowl, combine flour, baking powder, salt, and baking soda.  Whisk honey, oil, and
egg white into cornmeal mixture.  Stir in apple and flour mixture until just
combined; do not over mix.  Spoon batter into muffin cups, filling each about
two-thirds full.  Bake until toothpick, inserted in center, comes out clean,
15-18 minutes.  Cool in pan on rack, 5 minutes.  Remove muffins from
pan; serve warm or at room temperature.
