15 Bean Soup

Makes 22 Servings

Cajun 15 bean soup pkg (Hurst's Ham Beens)
1 large onion - chopped
1 lb lean sausage
2 tbsp lemon juice
1 tbsp garlic powder
1 - 15 oz. can stewed tomatoes

Wash beans - boil for 20 minutes - put in crock-pot on high for 3-4 hours. Check for
tenderness of beans to decide when done. One hour before beans are done brown
sausage and onion. Add garlic powder to mixture. Add tomatoes and lemon juice to
sausage mixture . Then add all of this to beans - add Cajun seasoning mix from
package - cook for about 1 hour on low. Adjust cooking and Cajun seasoning to
your own taste. Serve with cornbread and / or salad.
